The Ultimate Cinnamon-y Donut Ever. Cinnamon Toffee Crunch Donuts
YEAH DONUTS! Love me some donuts – all year round – but fall time particularly hits the spot. I’m talking about the donuts you get at the cider mill/farmers market – doused in cinnamon sugar or a classic old fashioned paired with warm apple cider. MM MMM I can’t get enough!
I am collaborating with many many bakers for The Great Insta Bake Off Collaboration (on Instagram) for the week of September 14! This of course is a themed bake off from the British show, The Great British Baking Show!! I was immediately obsessed when it aired on Netflix in the US and I binged all seasons! I was so inspired by the tremendously talented bakers on the show, I started following so many of them on social media.
The first bake on the show is a Signature Bake. The theme here we did for the collab is anything CINNAMON. Anything goes, but cinnamon should be the star of the show. Now this could be SOO many things…I didn’t go as classic as a cinnamon roll because it really is a signature bake, however I went with something still basic but loads of cinnamon flavor.
Welcome, the Ultimate Cinnamon Toffee Crunch Donut!! It’s a cinnamon-y donut, cinnamon-y glaze with a crunchy cinnamon-y toffee topping. YEAH I made cinnamon the queen of the show because that’s how it’s done!!
I did not fry these donuts, rather I baked them 🙂 but they yield a super soft and moist donut – these aren’t yeast donuts but cake donuts, and still friggin’ delicious. I had one for lunch, and my husband had one for lunch. And then some.

Cinnamon Toffee Crunch Donut
A heavenly cinnamon doused donut for your fall desserts!
Cinnamon Donut
- 1 cup all purpose flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 whole egg (room temp)
- 1/2 cup + 2 tablespoons milk
- 1 tbsp unsalted butter (melted, cooled)
- 1 tsp vanilla extract
Cinnamon Glaze
- 4 oz cream cheese (room temp)
- 1 tsp cinnamon
- 1/2 cup powdered sugar
- 3-4 tbsp milk
Cinnamon Toffee Crunch
- 2 tbsp salted butter
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
Cinnamon Donut
Preheat your oven to 325 degrees Fahrenheit. Spray or butter 6 donut pan and set aside.
In a large bowl, combine and sift together flour, sugar, baking powder, cinnamon, nutmeg and salt. In a separate smaller bowl, whisk together egg, milk, melted butter and vanilla. Stir the wet ingredients into the dry until no flour streaks show through (just combined but do not overmix).
Spoon the batter evenly into each donut hole, it will likely be just to the rim of the donut. Donuts come out full, but if you don't want the visible rim on the donut, lessen the batter by about 1/2 to 2/3 of the way up.
Bake the donuts for 15 minutes. Rap the donut pan when done on the counter and allow it to cool for about 5 minutes.
Cinnamon Glaze
In a bowl, whisk together (or if you have a hand mixer this will be quicker) cream cheese, cinnamon, powdered sugar and 3 tablespoons of milk. Add additional tablespoons to your liking of the glaze consistency. If it's too runny the glaze will fall to it's side and will not stick well to the donut. Set aside once done.
Cinnamon Toffee Crunch
In a small sauce pan, melt butter and sugar together on medium-low heat, continually stirring until the mixture starts to turn into a light brown.
Add in vanilla extract and cinnamon, stir well and remove from the heat.
Pour the mixture on to a silicon baking mat or parchment paper, spread it out thin with your spatula. This will cool immediately.
Using the back of a spoon, lightly tap the toffee and it will crack. Break into desired pieces for the topping. Save some for later, like for ice cream, or cake decorating!
Construct your donut!
I like the round side of the donut when baking donuts, since it doesn't show through the bubbles or imperfections, especially for glazing. Based on your preference, glaze one side of the donut by dipping it in the glaze and carefully lay it on a wire rack or tray so in case the glaze drops it will drop to the bottom. Top the donuts with the crushed pieces of cinnamon toffee crunch. Eat it and enjoy!!
