End of Summer Peach-Plum Buckle for Labor Day Weekend

Aaand just like that, summer is coming to an end! It’s already Labor Day weekend and I cannot be more excited guys 🙂 This summer has been something else, but hasn’t ALL OF 2020?! I looked back at how quickly summer went by, but I’m only looking forward. Also, I’ve been away for so long because we’ve been MOVING!!! I’m slowly getting back into the kitchen and this is my first bake in the home, and it really made the house smell wonderful <3

While I love love love fall, in order to get us there we must fully celebrate Labor Day – usually a BBQ filled weekend with some tasty treats! I truly love peaches and it’s likely the last time I’ll be baking with them until the next season. So, I was inspired by some other peach cakes and I had several peaches and plums I picked up from the farmers market that needed to be eaten!

You’re probably thinking though, what the heck is a BUCKLE? Good question. I didn’t know either until I did some wiki searching. A Buckle is similar to a coffee cake, whereby it’s different because it has some type of topping or streusel, and it has some type of fruit baked with it. The Buckle name apparently comes from while the batter rises as it bakes, the fruit and crumb topping weigh it down. This causes the surface of the cake to “buckle”! Cool cool cool.

Now, I really want to share with you this recipe because it’s really refreshing to have peaches in a cake – it still reminds you of summer, and there’s a bit of almond extract for some extra flavoring. The cake does not use an egg, actually a flax egg. That’s the specks of brown you see in the cake. If you don’t have ground flaxseed, no worries! You can certainly sub it for an egg. You can do up your topping and streusel if you’d like, I kept it simple with a cinnamon sugar topping with pecans. Other mixed nuts or oat mixture would be just fine too.

These bake for awhile since it is a bit of a denser cake, but patience is a virtue my friend. It tastes friggin’ delicious. I gave away half of it to my uncle who has been helping paint our rooms – so I hope that says something!

Peach-Plum Buckle

An end of summer treat for your labor day holiday

Wet Ingredients

  • 8 tbsp butter (browned and cooled )
  • 1/2 cup sugar
  • 2 tbsp flaxseed
  • 1/4 cup water
  • 1/2 cup yogurt (I used Foragers cashew yogurt)
  • 1 zest lemon
  • 1/2 tsp almond extract

Dry ingredients

  • 1.5 cup all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 medium peaches (peeled and sliced)
  • 3 small plums (peeled and sliced )

Garnish

  • 1/4 cup chopped nuts (I used walnuts)
  • 1/2 tbsp sugar
  • 1/4 tsp cinnamon
  1. Begin by melting the butter in small sauce pan and allow it to brown. As soon as it's slightly browned turn off the heat, set it aside and let it cool.

  2. Add the wet ingredients together in a medium bowl and mix well with a fork, or if you have a hand mixer that works as well. Once the browned butter has cooled, add it to the wet ingredients and mix well.

  3. In a second mixing bowl, mix together the dry ingredients. Slowly add the dry mixture to the wet, careful not to over mix the batter, so as long as you don't see any streaks of flour.

  4. Once combined, gently add in the sliced peach and plum. Pour the mixture into the 8×8 dish, and sprinkle together the cinnamon and sugar, then with the nuts.

  5. Bake ~40 minutes or until a toothpick inserted in the center of the cake comes out clean. Allow the buckle to cool for a few minutes. It's best served warm!
