Baked Oats (TikTok) but make it Carrot Cake

Hi there! Are you into food trends? Not all food trends excite me. For example, the latest one is Nature’s Cereal. Is this seriously a thing!? I’ll stick with my Cheerios and Frosted Flakes haha. I like the Dalgona Coffee trend from 2020, because I love my coffee and the recipe is easy and delicious! A recent trend I love that’s all over TikTok, is baked oats. It’s baked oats that tastes like cake and everyone enjoys it for breakfast! The concept is pretty simple – the batter is without regular flour, and subbing it with oats (any kind). So naturally, I like the idea of it because it is a bit healthier! Since Easter is right around the corner, I want to make it themed, or at least Spring related. Enter, Baked oats but make it carrot cake!

So, instead of the regular vanilla or chocolate ones people are making on TikTok, I am making a twist to mine. Added spices, shredded carrots, raisins and walnuts make this into a delicious carrot cake you can enjoy in under 10 minutes. Who doesn’t love Carrot Cake on Easter? Or, let alone, ever?! Also a bonus on this recipe, is that it has no refined sugar, and is dairy free.

When reading this recipe from one of my favorite food bloggers, Feel Good Foodie, she mentions to blend all of the ingredients and bake or microwave it. I love that she uses a nutribullet, or a smaller sized blender. I only have a large Ninja one, but I found that my recipe still does the job!

Tips for making these carrot cake baked oats:

  • Use real egg – I tested using flax egg, and was not able to replicate the cake consistency. I believe it’s because since it already uses oats, which is a thicker base than say flour. Adding flax adds even more texture which kind of throws the whole cake thing off.
  • Blend well! Don’t just blitz the blender, I suggest blending continuously at least 30 seconds or until all of the gritty oats are blended finely.
  • Squeeze out the juice from the shredded carrots! Lightly squeezing the juice out of the carrots helps you control the moistness of the cake. Too much liquid in your batter will result in a gooey, underbaked cake!
  • Don’t blend in your mix-ins. That includes shredded carrots, raisins and walnuts. You want these whole so you can have them in each bite!

Check out the recipe below and have a try for yourself! This recipe makes for two 6oz ramekins. You could also make these into muffins. By doubling the recipe, it should yield at least 4 muffins.

Baked Oats – Carrot Cake

Try this TikTok Baked Oats trend, but make it Carrot Cake! No refined sugar and dairy free.

  • High power blender
  • Measuring cups/spoons
  • Two 6oz Oven safe ramekins
  • 1/2 cup oats (I used quick oats, can use rolled oats)
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 medium egg
  • 5 tbsp maple syrup
  • 2 tbsp oil (I used olive oil, can use canola, coconut)
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup shredded carrot
  • 3 tbsp raisins (optional)
  • 2 tbsp walnuts (optional)

Simple glaze

  • 2 tbsp powdered sugar
  • 1/2 tbsp water (or milk)
  1. Brush oil inside your ramekin cups so that your batter does not stick to the cup.

  2. In your blender, put all of the ingredients in the blender, EXCEPT for raisins and walnuts. Blend for at least 30 seconds.

  3. Pour batter evenly into each oiled ramekin cup.

  4. Evenly disperse shredded carrots and walnuts in each ramekin cup, lightly stir with a spoon to incorporate through out the cake.

  5. Microwave both cups at least 2 minutes. Time will vary depending on how strong or weak your microwave is, but it should be microwave for at least 90 seconds.

  6. Mix together your glaze ingredients if you'd like, otherwise it's recommended to eat immediately when it's still warm! Enjoy!
