#QuarantineCooking Week 9 Meals

I sound like a broken record at this point! Who really knows when this pandemic will resolve completely, except the fact that we know it will take time and patience. I’ve been thinking about how I can change this up a bit, going on nearly 10 weeks of quarantine for us has been a challenge. So I might add in some “here’s what I also did during the week” in addition to all of the things we cooked. I’d like to look back at these posts and see how we made use our time during quarantine, as boring as it might have been at times! For now, here is a bit of what happened last week 🙂

Week 9 of Quarantine Meals:

Lunch

Leftover Thai – red curry with rice. Curries are delicious and especially the day after, the flavors intensify!
I had made bowtie pasta a couple nights prior, paired it with Rao’s marinara sauce, leftover veggies that were about to go bad and of course parm on top!
Grilled Cheese (Disney Grilled Cheese that my bff made :))
So this is interesting…I made leftover curry into scrambled eggs, with bake (fried dough often eaten in west indian culture)
I made a great discovery: kimchi and eggs might be the new favorite pairing 🙂 my hubs made this breakfast for us during the week

Dinner

Pan seared Omaha Steak sirloin with some veggies on the side because we need to eat our greens! I feel like I’ve been eating so many carbs lately -_-
Air fried chicken thighs – we used a generous dry rub with a side salad. SO GOOD. Air frying chicken keeps your chicken SO moist <3

That concludes this week…More eats to come per usual! Hopefully with the weather getting nicer, more veggies and healthier options to come too lol.
