#QuarantineCooking Week 8 Meals

Well it’s officially been two months since I’ve worked from home and quarantine cooking! It’s weird how fast time has flown by despite that things feel like they’re moving in slow motion. I think we’ve started to feel like we’re on auto-pilot at this point, getting accustomed to this stay-at-home lifestyle.

They say the only constant in life is change; we have a love-hate relationship with change. I know I do sometimes! Certainly when things are going poorly for us, we can take solace in the fact that, no matter what, things are not going to stay the same. One step at a time, right?

Here are the meals that got us through this past week…

Week 8 of Quarantine Meals:

Lunch

Here is some leftover sautéed veggies with rice..You can never go wrong with rice 🙂
Random things…miso soup, beef curry and corned beef hash lol..
One of my favorite things to eat…Lox, Scrambled Eggs with Scallion on toast. A drizzle of dijon mustard and sprinkling of Everything Bagel salt and you are good!
Another randomness…rice and beans, lox, avocado and quick pickled veggies I made a few nights ago.
We had plans to eat pizza Friday night so we kept lunch light…some bean and veggies sautéed in garlic, olive oil and oregano.

Dinner

Some interesting mixes of food this week, most certainly delicious ones might I add!

Omaha burger patty with avocado and a fried egg. Side of potatoes and mac & cheese…definitely a heavy but satisfying dinner!
Shrimp tacos! Taco Tuesday! And paired this with a passion fruit margarita 🙂
Blackened salmon with rice & beans and a side salad…provided by my MIL <3
When you crave noodles…Udon is the key! I always keep a pack of udon in the freezer.
Ended the week with pizza because… PIZZA! We tried out a new place – it wasn’t bad but it wasn’t awesome. You get what you pay for!

Anyway I thank God my family and friends are safe… I will continue to cook and bake to keep me sane during these changing times!
