#QuarantineCooking Week 1 Meals

Since I’ve been home the last 7+ days, the kitchen has been in use 24/7 😛 I’d love to share what I’ve been cooking up in the house, perhaps they will inspire you to do some work in the kitchen, rather than reading up the latest news or watching Netflix all day! I personally get tired of looking at my phone for too long, my eyes start to hurt and mentally, just need a break. I turn to the kitchen and see what I can put together with what I have available. Here are some pictures of meals I made through out the week…some meals I skipped to post because to be honest, I just snack a lot, and that fills me up lol. Enjoy!

Week 1 of #QuarantineCooking:

Breakfast

Usually during the work week I’m in the office drinking tea or coffee and snack on some nuts, but these days I eat a late breakfast/brunch or just head straight into lunch lol.

Scrambled eggs w/Scallion, truffle salt roasted potatoes, Golden (frozen then air fried) spinach cakes, couple slices of roasted deli ham
Buttery (Gordon Ramsey style) cooked eggs, sliced bananas, roasted ham and couple slices of lox.
Cashew yogurt, hemp hearts, flax seed, crunchy peanut butter, chia seeds, strawberries, cinnamon, nutmeg, honey. One of my favs to make!

Lunch

I try to keep lunch filling but not as heavy, and if we do something heavy, try to keep the dinner light.

Cauliflower crust, mozzarella cheese and pepperoni. Made at home, and super delish!!
Leftover steak for steak salad – spinach, cucumber, avocado with balsamic dressing. Edamame side pasta with sautéed onions, mushrooms and zucchini.
Chili – beans, tomatoes, ground beef, bunch of spices. Avocado and cheese for topping. I was full for hours!
Air fried and glazes chicken wings. So many things in this sauce I can’t remember but I hope I can remake it because it was SO good. And, SO quick to make!

Dinner

I look forward to eating dinner, if it’s not breakfast, then definitely dinner. It’s the last meal you eat and it better be tasty! That said, I try to think of good ideas to eat, unless I am extremely tired or don’t want to cook anything then I’ll make an easy meal (leftovers).

Right Rice cajun flavor (super flavorful and plant based), stir fried chicken thigh and chickpeas. #protein!
Garlic shrimp and mushroom over polenta. I added some leftover pepperoni since I didn’t have any prosciutto, to add some meaty texture.
I dislike chicken breast, but I made a MEAN chicken parm. Almond flour instead of panko, lots of cheese and marinara sauce. DAMN, so good.
Cast iron steak au jus – enough said :p
Grilled miso & gochujang chicken breast (again don’t like chicken breast so I have to marinade it!) with veggies..made guac on the side for dipping. Also not pictured are addicting cassava chips we keep buying from Whole Foods!
