Short Week! + #QuarantineCooking Week 11 Meals

I love and hate the week coming off a holiday, because although it’s a short work week, it somehow takes a lot longer to get to Friday! Anyone else with me on that?? I had an extra cup of coffee just to get through the last day and then in a blink it’s already Sunday lol…

I did something really fun this week – I work with a vendor who invited me to a virtual wine tasting!! There were at least ten other attendees, for a virtual tasting at the Big Basin Vineyards in California. Unfortunately with the delays in shipping, some of us didn’t get the wine (myself included) but I still joined anyway and learned a ton about wine and the business in general. I learned there’s a wine called Grenache? Here’s what came in the mail just in time for the weekend though 🙂 which we enjoyed with one of our meals!

This previous week in meals – trying to be a bit healthy as I try to incorporate veggies in most of my meals, however my weakness is dessert. I am always eating sweets. What you don’t see here is that I made chocolate chips this past week and made 33 of them. Soo I haven’t had a chance to give any of these away (because social distancing) but also I haven’t minded just keeping them either lol. Soo a cookie a day it is haha.

Now to the good stuff! A week of meals in pictures per usual…

Week 11 of Quarantine Meals:

Breakfast

I was unusually hungry in the morning – might have been because we had an early dinner the night before. And I stopped myself from eating any dessert (for once).

Cashew yogurt – I love the Forager Project brand so much! I have these mini mixed nut snack packs on the go so I tossed one of these into a bowl of yogurt. Perfectly filling!
Here’s another yogurt bowl – same Foragers Cashew yogurt (unsweetened) with blueberries, raspberries, half a banana, hemp seeds and a handful of nuts. Delicious!

Lunch

Roasted potatoes, a quick spinach/mushroom egg scramble and a slice of my homemade toast…can’t beat breakfast any time of the day, am I right??
Had some leftover Guyanese home cooked food, here’s a part of some – curried fish and chow mein. I had to add in some veggies so carrots and potatoes it is lol.
More Guyanese leftovers – okra on the left, salted shrimp on the right and the remaining potatoes! Lots of carbs so far I know lol.
Here is where we start to get a bit more healthy haha. Spinach cakes topped with beef chili for some protein. Side spinach salad and bit of leftover Right Rice (cajun flavor, so good!)
I was inspired my girlfriend who eats salad multiple times a week! I haven’t had a salad in awhile so here is a (warm) spinach salad with sautéed mushrooms, peppers, broccoli. I made a homemade dijon mustard/tahini/vinaigrette. Delicious!

Dinner

Memorial Day meals we enjoy it with some close friends – in distance – although not pictured, we enjoyed an outdoor picnic with snacks, musubi, fruit, chips and dip! Dinner, our friends made some kimchi pork fried rice, some grilled meats and sushi. So delicious! The rest of the week looked like this:

We made ribs in the crock pot <3 and it was BOMB. So good. Paired it with a side spinach bean salad, roasted broccoli and shishito peppers! YUM.
Switching things up – shrimp and cauliflower gnocchi from Trader Joes. I used Rao’s Marinara sauce and added in some mushroom and peas. Super simple dinner, probably cooked everything under 20 minutes!
I love my airfryer…Chicken wings are amazing! I made a secret sauce to go with it hehe.
Full on Japanese meal… Broiled salmon, fish cake (sastuma age), takoyaki, edamame, and soba! Felt like I was at home 🙂
A wonderfully seared cast iron steak (butter and garlic!) with a stuffed potato (from Omaha steak) a nice bottle of red and side roasted carrots and broccoli.

Weather is certainly getting warmer and warmer.. these past few days was rain and then hot again so it’s going to be an interesting summer! I’m glad we’re finally kicking off summer. I hope we can start to enjoy the outdoors a bit more without the restrictions, but in a safe manner. We all gotta live right?! Until next week’s food shennanies…!
