#QuarantineCooking Week 7 Meals

Alright I’m starting to feel a stir crazy being indoors but we have been making do by social distancing with some family – at least 6 feet apart! It’s nice to see family during this time, and can’t wait to hug them once this is all over. It makes you realize how much we taking something simple as a hug for granted!

This week we have been eating a lot of home cooking from my mother in law. Delicious Guyanese meals that I cannot make (just yet!) and they are so yummy and filling. It’s been such a help during the work week.

Week 7 of #QuarantineCooking:

Lunch

I’m going to skip breakfast because that’s exactly what I did most of the week! Here were some quick lunches I made:

Leftover ground turkey in Rao’s Marinara Sauce with Edamame Pasta
More Edamame Pasta – with pesto and canned salmon and capers
Homemade Bagels! With scrambled eggs and crispy brussels sprout salad (I love breakfast food any time of the day!)

Dinner

My SIL sent us an enormous box of Omaha steaks for helping watch the boys and we have a stock fill of types of meat. We got to enjoy some of this week – and their stuffed potato is pretty good!

Sirloin, stuffed potato and steamed frozen veggies (ew I know)
A typical Japanese Breakfast except we had it for dinner.. Rice, some type of broiled fish (in this case Mackerel) and miso soup (felt right at home with this one!)
Guyanese food! My hubs prepared the roti, the some potato/salmon mix on the side and a cooked egg.

Slowly but surely I hope things will return to normal. Especially because it’s a bit of a downer that we have to stay indoors while the weather warms up! But, the cooking and baking will continue in the meantime 🙂
