Peanut Butter Chocolate Chip Cream Cheese Crumble Bars
WHAAT? What a mouthful but I don’t know what else to call them lol!
I made these spontaneously after cleaning out my freezer one day. I had a leftover packet of Nestle chocolate chip cookies from Christmas. We ate several for Christmas morning, per my husbands request (and it was the best thing ever). Anyway, since then we haven’t eaten any and four remaining pieces have been sitting in my freezer, needing some love.
I decided I could transform them into bars instead of simply eating them as cookies and it turned out pretty yummy 🙂 I gave most of these away to my SIL but kept a few to myself. I’ve been eating them for breakfast here and there with my coffee and it makes my morning! Dessert for breakfast, always approved in my book!!

TIP! If you don’t have Nestle cookie dough, and only regular cookie though laying around, each Nestle chocolate chip cookie dough piece is .6875 oz in a 24 pack (total of 16.5 oz). Let’s round that up to .70! If you have a scale, I suggest you weigh out 2.8oz of cookie dough (for four pieces as called for in the recipe). If you don’t have a scale, you can measure about 5.5 tablespoons.
Peanut Butter Chocolate Chip Cream Cheese Crumble Bars
Use leftover cookie dough to make this quick bar, using your staple pantry items!
Bottom Layer (chocolate chip peanut butter)
- 4 pieces Nestle chocolate chip cookie dough (room temp)
- 1/2 cup creamy peanut butter
- 1 whole egg
- 2 tbsp flour
Middle Layer (cream cheese)
- 8 oz cream cheese (room temp)
- 1 whole egg
- 1 tsp vanilla
- 1/4 cup sugar
- 1/4 tsp ground cinnamon
Top Layer (oat crumble)
- 2 tbsp cold butter (broken into pieces )
- 1/4 cup oats
- 2 tbsp brown sugar
Preheat the oven at 325 degrees, and line a 8×8 pan with parchment paper
Bottom Layer
In a stand or hand mixer, mix room temperature Nestle chocolate chip cookie dough with peanut butter (the dough should be room temperature so it is easier to combine the two).
Add in one egg and mix again until well combined.
Toss in the flour to just mix in – this is simply adding some structure to the bars, do not over mix.
Press the combined dough into the parchment paper as evenly as possible, making this the bottom layer of your bar.
Middle Layer
Combine all of the cream cheese layer ingredients in the mixer, and combine very well. Cream cheese will be clumpy at first, just keep mixing and it will smoothen out over time.
Pour the cream cheese layer on top of the cookie dough layer and smooth out the top with a spatula
Top Layer
Combine all oat crumble ingredients together in a bowl.
Using your fingers, start to press the butter with the dry ingredients together to create the crumble. Mix until the butter is combined evenly so no large pieces of butter are left over.
Sprinkle the oat crumble evenly on top of the cream cheese layer.
Bake and enjoy!
Place in oven for about 30 minutes or until the edges are slightly browned
Let the bars cool before you remove from the pan. It's easiest to transfer the bars onto a cutting board once cooled with the parchment paper, along with cutting them as well.
Keep these in the fridge in an air tight container for up to a week. I haven’t tried freezing them but I bet you could up to a month and let them thaw. Warm it up in the microwave and mm mm you are good to go!
