Chocolate Banana Cake for Two
Christmas has come and gone! Phew, time is REALLY flying by because it’s nearly 2021 (Thank God!) I am so grateful I’m present in good health and so are my close friends and family. I’m posting up a new easy recipe, coming off a busy Christmas menu of baked goods (we do a Christmas Cookie exchange every year with the family), plus we know the holiday times are simply always hectic.
I was on a hunt for something chocolatey and I created this really easy one-banana-chocolate-cake-for-two! And just because Christmas is over, Chocolate is still very much enjoyed throughout the year, not just the holidays! See some of the best tips below on this recipe!
I had this lingering browning banana, ready to be baked, but I didn’t want to make yet another banana bread (amirite?!), so here is a really easy bake you can make at home, and I love it because it’s simple, you can combine everything into one bowl and is ready under 45 minutes.
Tips for making this uber-delicious:
- Use crushed walnuts inside the batter AND top (but if you aren’t a nut person, I would recommend adding some chocolate chips!)
- I used two 8oz ramekin cups to make this as the recipe is made for two people, or really small servings for four (no fun lol). So I highly advise to get two small oven proof servings or a smaller baking dish you can easily portion out! You can easily double the portion to make it for more servings.
- If you’re feeling extra, top this with a scoop of ice cream when the cakes are right out of the oven! Soo gooey and delicious!

Chocolate Banana Cake For Two
A small portion of chocolate cake, for two! It's an easy recipe if you have a banana to spare!
- 1 ripe banana (mashed)
- 1 whole egg (room temperature)
- 1 tsp vanilla extract
- 2 tbsp neutral oil (coconut or even olive oil )
- 1/4 cup AP flour
- 2 tbsp dutch unsweetened cocoa powder
- 2 tbsp light brown sugar
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1/3 cup chopped walnuts (2 tbsp for topping)
Preheat oven to 350 degrees, oil two 6oz ramekin cups and set aside
Mash one banana well in a medium mixing bowl
Add in wet ingredients: one egg, oil, vanilla extract and mix thoroughly with a fork or whisk
Add in dry ingredients: flour, cocoa powder, sugars, baking soda and salt and mix until no large streaks of flour are visible (do not overmix).
Fold in chopped walnuts and pour into oiled ramekins
Bake in the oven for 25 minutes, or until toothpick is inserted and comes out clean. Enjoy!
You can make this vegan by adding in a flax egg; 2.5 tbsp of water to 1 tbsp of flaxseed. Combine well and let it sit for a few minutes before incorporating into your mixture. It will be a gelatinous consistency.
Please leave a comment and feedback if you make it! I would love to hear how you like it (or maybe don’t!) It helps me understand what could be tweaked 🙂
I hope you’re still in some holiday spirit, it doesn’t end just at Christmas! Our Christmas tree is still up and probably will be for the couple of weeks. We are still listening to some Christmas tunes until the New Year really rings in! Cheers and have a great week!
Love,
Rina
