You’re Going to Want Some of This Honey. It’s Russian Honey Cake!
On the third day of #TheGreatInstaBakeCollab my true love gave to me…the Showstopper challenge was a treaaaaat! Alright guys, the last challenge to this Instagram collaboration was the Showstopper challenge, which should be a layer cake – can be simple or grand, but should be at least 2 layers.
I am not a great cake baker and haven’t baked many cakes in my lifetime, but it’s so much fun. I love to think of flavors and decorations but I’m not there just yet, maybe one day! I love to challenge myself though and see what I can accomplish in the kitchen, so I thought what cake has umpteen million layers? Because why not make it even more harder?! I tried making a crepe cake but lets be honest, it’s not really a cake. I saw a food blogger MyThy (@Mightyinthemitten on IG) make a Russian Honey Cake a while back and ever since then it’s been stuck in my mind about how laborious it was to build the cake. You would think baking cakes was – baking layers in the oven and icing between and voila. NOPE not with a Russian Honey Cake!
I used this recipe from Moms Dish and took some technique tips from Smitten Kitchen to build my own Russian Honey Cake. I had a total of 8 layers with a nice glaze frosting in between. Since I work full-time, working on this right after work for 8 straight hours didn’t seem practical so I broke up the task between 3 days. Bake the layers one evening, make the icing and layer the cake another evening, and finally – crumb the cake and shoot photos the last day. It took a lot of work but a lot of love, too! It came out delicious…I think it could have used a touch more icing and bit more cooking of the honey so it darkened a bit, but I think it was an accomplishment!
The two linked food bloggers showed really great ways of making the cake including pictures, so I would recommend using them as a good source if you ever want to challenge yourself on a cake day!!
