#QuarantineCooking Week 5 Meals

Another week, another week of #quarantine meals! This week we were grateful to eat a lot of leftovers from a feast my husbands Mother cooked for us, on Easter. We picked up several to go boxes of home cooked Guyanese food and it has fed us for most of this week. I am eternally grateful for family especially these days.

We celebrated Easter at home, just me and my husband. While we usually have a gathering with our families, this is one to remember to reflect on gratitude in difficult times. We have it VERY GOOD now, and continue to pray we all get through this together!

So that said – we had a lot of leftovers through out the week. Some we cooked here and there and ended the week night with some take out.

Week 5 of #QuarantineCooking:

Breakfast

I made a wonderful Matcha Banana bread last week, and have been snacking on it for breakfast with a clementine, most days this week.

I was feeling quite gluttonous this week (lent being over after all), and I remembered I was re-organizing my freezer the other day and saw I still had frozen Cinnamon Rolls! YES. So I reheated it for 25 seconds in the microwave – didn’t have any cream cheese frosting left over but it was still good without. Paired it with coffee and it was guuuud.

There’s a recipe and video to this as well. It’s not all that complicated as people thing, just need some time!

Lunch

So like I said, lots of leftovers from Easter, so I only posted two plates, whereby we probably 4 plates of leftovers during the week lol.

Clockwise starting from 9oclock: Cookup (rice, beans, mishmash of things with daal on top, an egg ball (boiled egg, wrapped inside fried mashed yuca), chow mein, some baked lamb, and curry beef).
Same, now with mac & cheese that my husbands uncle made 🙂 he knows I love his mac & cheese
Leftovers from a dinner I made – teriyaki chicken, with Japanese Kabocha, and a spinach salad.. because I have not been eating any greens lately!
Tofu egg scramble with spinach and tofu topped with green onion, and a couple slices of homemade bread (post coming up soon!)

Dinner

Some good old easy recipes for dinner this week, plus a really good take out!

RAMEN. With an egg of course.
I had tofu and leftover veggies, so green Tofu Curry it is!
Teriyaki chicken with roasted kabocha with Kewpie mayo, and spinach salad (I don’t recommend roasting Kabocha, you need it in a sauce because it’s a dry squash!)
The remaining frozen chicken parm my SIL had made for us, with roasted brussel sprouts!
I have been craving some Chinese food.. that was our Friday night. No cooking, just good old fashioned Chinese take out. Again, forgot to order veggies. SMH.

Dessert

I don’t usually post desserts, because I’m usually just eating cookies (or now, Girl Scout cookies because we got 8 boxes), but I make this every once in awhile because it is so good.

Coconut yogurt, cacao powder, cacao nibs, bit of date syrup and berries. It is delicious. It’s like a mousse but so easy and lighter!

I ate really well this week, given that we celebrated Easter, lots of good leftover food and just eating when felt right to me. I definitely missed my carbs and rice, so I allowed myself to enjoy it because … rice is life! lol yeah I said that. Also, while I am going a bit over board on the Girl Scout Cookies, I love them and I only enjoy them once a year! Sooo y-o-l-o.

At the end of the day, although this quarantine has been a challenge for all of us, I am personally just grateful we have food to eat, we are healthy and we have jobs. Enjoy your weekend and hope you make some yummy food!!
