#QuarantineCooking Week 4 Meals

Wow we’ve made it four weeks (under isolation) already! I think another month to go…We had a week of home cooked meals but also some take out too (some of which I forgot to picture here) but nonetheless still very good.

This is our last week on lent so next week we’ll likely be introducing back in the CARBS and SUGAR lol, especially because Easter is right around the corner!

Week 4 of #QuarantineCooking:

Breakfast

I was STARVING one morning this week so we made a nice breakfast plate 🙂 otherwise no breakfasts, just snacking and coffee, per usual lol.

Spinach cakes, scrambled eggs, and BACON <3

Lunch

Lots of leftovers for lunch – easiest way to make a meal, especially because when you’re working during the day you just need 30 minutes and you’re back to work.

Leftover falafel mix I made the night prior, with cilantro Bitchin Sauce with a side spinach salad
Hubs made garlic rosemary chicken in the airfryer РI topped it over a bed of spinach and cucumber, with saut̩ed mushroom and peppers.
My SIL made us a tray of chicken parm so we had this a couple times this week 🙂 side avocado and spinach salad
We got take out from a BBQ spot down the street – made a side of green beans (frozen) and kale tots (frozen)

Dinner

Some simple, some not, and all were very yummy dinners this week.

VERY simple – miso soup with snap peas and tofu, broiled mackerel (frozen) and edamame (frozen)
Common dinner for us – fish tacos (cod, broiled), this one is with kimchi and guac on my fav tortillas from the Siete brand.
Warm spinach salad Рsaut̩ed veggies (snap peas, mushroom, peppers, cucumbers)
Spicy cucumber side dish with broiled mackerel! There was a side miso soup missing in the picture.
Middle Eastern theme – harissa seasoned beef and veggies and homemade falafel.
My favorite meal of the week Рvery hearty Italian sausage over polenta with wine reduced saut̩ed mushroom and peppers.

That’s a wrap for Week 4 Quarantine meals! There will be at least four more weeks of this…keep eating good, stay healthy and stay inside!
