#QuarantineCooking Week 3 Meals

This week was unusually more busy so I didn’t get to prepare a lot of meals, but still delicious, quick ones! It’s so much easier to have something already made – like cooked veggies or salads that you can tack on the side. Or sometimes you just were really lazy, and all you had were some eggs 🙂 Check out this week’s #QuarantineCooking meals for the week…We’re inside for another month so more and more cooking and baking to come…

Week 3 of #QuarantineCooking:

Breakfast

I did not make any breakfast meals, because I honestly don’t make time for that during the week lol, but I did make this cool trendy thing called Dalgona coffee!

Equal parts 2 Tbsp Instant Coffee, Hot Water and Honey, but it’s this whipped topping that’s scouring instagram and it’s good! I think it’s probably much butter with sugar though..

Lunch

I made some really easy lunches this week, nothing prepared from scratch because I had everything mostly on hand..

3 bean Turkey Chili – I have another frozen batch so I will likely be eating this again next week lol
I had made a large batch of chickpea salad last week and this was the last bit that I had left – topped it over some arugula salad for a light light. I had a few chicken wings left too so had that on the side 🙂
We had this instant package of shirataki noodle ramen – spicy miso flavor. I bought these from Mitsuwa and were a perfect lunch. I made it in less than 7 minutes! Sauteed some veggies and everything was already made!

Dinner

I always try to make time for dinner so there’s always more pictures of dinner meals than anything. I have a few favorites I made this week but they were all pretty delicious!

Trader Joes frozen eggplant parm, edamame pasta and rao’s pasta sauce.. the frozen package was made in 40 minutes in the oven and the rest was done in less than 10.. So easy!
Here’s my sad dinner – eggs and frozen spinach cakes with kewpie mayo (japanese mayo) lol I was so lazy I did not want to cook! We all have those days.
Korean BBQ marinade beef sautéed with LOTS of veggies, add in shirataki noodles and of course a fried egg..tasted like a bibimbap! I bought the beef pre-marinated from Mistuwa but will try to make it myself next time 🙂
Steak salad with balsamic vinaigrette, a side of truffle salt potatoes <3<3<3 I love steak and potatoes! So heavy and comforting lol
I love me some hot pot. We have this a few times a month because 1) its easy 2) very filling and 3) cheap! A variety of vegetables and meat with two dipping sauces and you’re good to go.

I enjoyed cooking this week, despite that I was busy, but I made some excellent meals! It’s good to mix in really easy ones so you don’t go overboard on cooking everything from scratch every day. I am sure some home cooks do that all the time, but I like a good balance personally. Sometimes I’m on a roll, other times I’m like, eff that, let’s just eat eggs. lol.

Four more weeks of this *hopefully* and we can start enjoying food served in restaurants and getting back into the dining experience (hello, NYC!). I hope you are all staying safe, getting creative and inspired to make yummy food. Happy APRIL (already!) and let’s make the best of this month as we can through food 🙂
