Anytime Dessert: Fruit Crisp!
I don’t know where time is flying to, because I certainly don’t remember most of June lol. I’ve been baking around here and there but I haven’t posted much lately! I also haven’t been posting my weekly Quarantine Cooking meals because well…we’re in quarantine for the rest of our lives. JK, there is a light at the end of the tunnel. BUT – I will be working remote permanently so I won’t be commuting to work anymore…
That means, I should have more time cooking right? Yes, but I’ve been experiencing MAD cooking-at-home-burnout! Listen, I love to cook, but nowadays I’m opting for easy recipes, also because it’s summer and I want to spend more time outdoors if possible.
I’ve been wanting to post this recipe for quite some time and am finally getting around to it. Perfect for any day, not just for the summer. You know why? Fruit crisps can be made with frozen fruit – which I recommend you have on hand! Not just for smoothies, but for a decadent dessert that doesn’t require much time or effort.

Easy Fruit Crisp
A quick dessert you can whip up in under 30 minutes. All you need for a fruit crisp are ingredients you likely already have in your pantry!
Wet ingredients
- 5 cup frozen fruit (Mix it up! Peaches and berries are a great combo!)
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp ground cinnamon
Dry / Oat crumble (crisp)
- 1 cup oats
- 1 cup all purpose flour
- 1/2 cup light brown sugar
- 1/4 tsp salt
- 6 oz unsalted butter (melted, cooled )
- 1 tsp vanilla extract
Preheat oven to 350 degrees fahrenheit
Butter a 9×9 pan and set aside
Frozen fruit layer
Pour in frozen fruit in a large mixing bowl.
In smaller bowl, whisk together sugar and cornstarch. Mix this into the bowl of frozen fruit and make sure all fruit is coated evenly.
Pour fruit + sugar mix into the 9×9 pan and set aside.
Oat crumble (crisp) layer
In a separate mixing bowl, combine all dry ingredients minus the butter, whisk together well. Then pour in the butter and mix until the mixture is a crumble texture.
Bake!
Toss the crumble topping all over the fruit layer evenly. For some added fruit, feel free to put more frozen fruit on top so you have another light layer of fruit.
Put pan in the oven for 30 minutes – the crumble should start to crisp and brown.
Enjoy this by itself, eat it with ice cream, or for a healthier twist, top it off with some yogurt!
The nice thing about fruit crisps is that it’s an easily adaptable recipe. You can mix up whatever fruit you have on hand. You don’t have to use frozen fruit, either. Fresh fruit will do, too! If you’re using apples, it’s recommended to peel them and cook them through a bit otherwise they will be a bit crunchier than what you would expect from a crisp. You can also omit some of the crisp if it’s too much – some people like more fruit than crisp!
