A Foodies Harmony featuring (healthyish) Peanut Butter Banana Bread! Promise you won’t miss the butta.

Happy Monday y’all! I hope you enjoyed the weekend whether it was Netflix + eating, online shopping + Grammys, laundry + workouts…whatever the case the weekend goes by soo fast, right?! I try to avoid the Sunday Scaries by doing something I love and being present (mentioned in my earlier post). It helps me focus on the now and not worry about what’s to come. My weekend was full of eating. Per the usual routine, but in particular, BANANA BREAD.

It isn’t just any kind of nana bread – it’s PEANUT BUTTER BANANA BREAD! *cue Hawaii 5-0 jingle* haha I don’t know why of all jingles I thought of that one. But it makes me excited. Nothing else really excites me like a PB and Banana pairing. I eat it SO often (sometimes with other nut butters) that I even got my hubs to start noshing on it ???????????? I tested this recipe multiple times and finally got to one I really liked. Here’s why I love it!

  • PB and Banana are essentially made for each other
  • It’s a healthified version – using maple syrup instead of sugar, coconut oil instead of butter, whole wheat instead of white flour
  • It’s the perfect base to add other mix-ins – more nuts, cranberries, or chocolate chips (my personal preference)

You can certainly omit the peanut butter if you don’t like it and increase the flour by 1/4 cup but I don’t know why you’d want to do that ????

This banana bread version is slightly modified to accommodate a bit healthier lifestyle! You don’t ever have to forfeit the flavor with healthier ingredient swaps – I promise you won’t miss the butter :). If you don’t like peanut butter, try almond or cashew butter! To me, peanut butter and banana is pretty much one of my favorite pairings so this was a no-brainer. I hope you love it as much as I do – eat it for breakfast with tea, snack on it or have it for dessert!

Healthyish Peanut Butter Banana Bread

A healthy version of banana bread, incorporating some protein and sans the butter!

  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup mashed browned bananas (3 small bananas or two medium to large bananas)
  • 1/2 cup crunchy peanut butter (I love Santa Cruz – roasted peanut butter)
  • 1/2 cup coconut oil (melted and cooled)
  • 1/2 cup maple syrup
  • 2 whole eggs
  • 2 tsp vanilla extract
  • 1/2 cup walnuts (optional but highly recommend! )
  1. Preheat your oven to 350, line your loaf pan with parchment or oil/butter the inside.

  2. In a medium bowl, whisk together flour, baking soda, salt and cinnamon and set aside.

  3. In a separate medium bowl, mash bananas (I like to leave small chunks), mix in your preferred nut butter, beaten eggs, cooled coconut oil, maple syrup and vanilla.

  4. Once the wet ingredients are mixed well, slowly start adding in the dry ingredients in small batches. Key is NOT to overmix – otherwise your bread will be super dense!

  5. Fold in your add-ins like additional nuts or chocolate chips

  6. Pour in your batter into the loaf pan and place inside the middle of the oven.Bake for 45-55 minutes or until golden brown outside, poke with a toothpick to test if it comes out clean.

  7. Let it cool for 5-10 minutes, slice away and enjoy it with maybe even more peanut butter :):):)

If your nut butter is hardened because it’s left in the fridge, measure it out and microwave it for 10-15 seconds so it’s not so tough to mix into your wet ingredients Add in an additional 1/4 cup flour if you’re omitting nut butter, and 1/4 cup maple syrup if omitting the chocolate chips!
